chore(checkpoint): bump patch version (#6244)

- Bump `langgraph-checkpoint` to 2.1.2
- Bump `langgraph-checkpoint-postgres` to 2.0.25 and raise
`langgraph-checkpoint` dep lower bound to 2.1.2
