docs(checkpoint-postgres): describe the stage-1 query and the unstarted walk state

The stage-1 docstring described one column pair per channel with no
subquery; it selects three columns per channel, one an EXISTS probe, and
stops on a short page. The walk-state list gained the case where the
target's row has not loaded yet.
